Red grouper are the most reliable bottom fish off Sarasota: open in Gulf state waters year-round, a 20-inch minimum, and a 2-fish bag inside the 4-grouper aggregate. The catch is distance — short fish are everywhere in 40–60 ft, but consistent keepers live in 70–140 ft of water, roughly 15 to 30 miles off the beach.
Keepers start about fifteen miles off the beach, in seventy feet and better.
Where do you catch red grouper off Sarasota?
Not on the reefs — on the flat stuff between them. Red grouper are hole-dwellers, not ledge fish. The signature terrain off Sarasota is “Swiss cheese” bottom: flat limestone pocked with solution holes, mostly in 60–140 ft. It looks featureless on the surface and marks hard on sonar with almost no relief. A red grouper sits in or beside a pothole and ambushes whatever drifts past.
The local depth ramp is gentle: the bottom slopes away, hitting roughly 60 ft about 10 miles out, and 100+ ft means a 25–30 mile run. Plan fuel accordingly.
| Target | Depth | Distance from Big Pass / New Pass |
|---|---|---|
| Short fish (under 20”) | 40–60 ft | 5–10 miles |
| Consistent keepers | 70–120 ft | 15–30 miles |
| Big fish (15 lb+) | 120–140+ ft, the deep breaks | 30–40+ miles |
Artificial reefs like the Sarasota County M-series (GPS numbers here) hold some reds, but the numbers game is drifting live bottom between the numbers. Drift, and when a good fish comes over the rail, throw a marker buoy and work that patch hard — where there is one occupied hole there are usually several.
From the surface it all looks the same — the terrain that holds red grouper is on the bottom.
How deep do you need to fish for keeper red grouper?
70 ft is the practical floor for a keeper bite; 90–120 ft is the sweet spot most of the year. Two depth rules worth memorizing:
- Cooler months concentrate fish. October through March, reds stack on the 70–120 ft breaks and feed hard.
- February 1 – March 31, federal waters seaward of 20 fathoms (120 ft) are closed to red grouper harvest. Fish inside 120 ft those months. A second closed zone called “The Edges” is off-limits January 1 – April 30. Details are in the NOAA red grouper closure bulletin.
NOAA has proposed dropping that February–March closure seaward of 20 fathoms and raising red grouper catch limits under Amendment 62. As of July 2026 it is still a proposed rule, with comments open through August 6, 2026 — no final rule, so the closure applies this season.

What is the best bait and rig for red grouper?
Reds are the beginner-friendly grouper: they eat dead bait readily, which gags mostly won’t.
| Item | Spec |
|---|---|
| Rig | Knocker rig or sliding-sinker (fish-finder) rig |
| Leader | 60–80 lb fluorocarbon |
| Hook | 5/0–8/0 non-offset circle hook (required with natural bait) |
| Weight | 4–12 oz — whatever holds bottom on the drift |
| Dead baits | Cut threadfin, sardines, squid, octopus |
| Live bait | Pinfish — upgrades your average fish |
Drop to the bottom, crank two turns, and wait. When the rod loads, reel — do not swing. Circle hooks set themselves, and a missed jab usually means a stolen bait. Live-bait skills transfer directly from inshore fishing; our live bait guide covers catching and keeping the good stuff, and the bottom fishing primer covers rigging in detail.
How do you tell a red grouper from a gag?
The two mix on the same bottom in 60–100 ft, and the limits differ, so ID matters.
| Feature | Red grouper | Gag grouper |
|---|---|---|
| Color | Rusty red-brown, pale blotches | Brown-gray with worm-like markings in box patterns |
| Mouth interior | Red-orange | Pale |
| Tail | Squared to rounded | Boxier, slightly concave |
| Minimum size (Gulf) | 20” | 24” |
| 2026 harvest season | Year-round in Gulf state waters | Gulf state waters reopen Sept 1, 2026; federal waters Sept 1 – Oct 1 |

What are the 2026 red grouper regulations in the Gulf?
| Rule | 2026 value |

| Minimum size | 20” total length |
| Bag limit | 2 per person per day, within the 4-grouper aggregate |
| Captain and crew (for-hire) | Zero bag |
| Gulf state waters season | Open year-round |
| Federal season | Closed Feb 1 – Mar 31 seaward of 20 fathoms; “The Edges” closed Jan 1 – Apr 30 |

Four licence and gear requirements apply to a reef-fish trip on a private boat:
- State Reef Fish Angler designation — free, annual, and required of every angler 16 and older fishing for reef fish from a private vessel, including anglers who are otherwise licence-exempt (65+, lifetime licence holders, disabled and military exemptions). Passengers on a licensed charter boat or headboat do not need it. Sign up at GoOutdoorsFlorida.com.
- Descending device or venting tool rigged and ready — required in Gulf federal waters under the DESCEND Act, and in Florida Gulf state waters since April 1, 2023. Background in the NOAA DESCEND Act bulletin.
- Non-stainless circle hooks with natural bait; in state waters they must also be non-offset.
- A dehooking device on board. Gear specifics: FWC reef fish gear rules.

How big do red grouper get?
The Florida state record and the IGFA all-tackle world record are the same fish: 42 lb 4 oz, taken off St. Augustine on March 9, 1997 (Florida saltwater records). Off Sarasota, a 15-pounder is a very good day and anything over 20 lb is a talker. Red grouper are protogynous hermaphrodites — all start life female, some become male later — and live 25+ years, which is why the bag limits are conservative.
FAQ
Is red grouper open year-round in Florida? In Gulf state waters (out to 9 nautical miles), yes. In federal waters, harvest closes Feb 1 – Mar 31 seaward of 20 fathoms. Check FWC’s grouper page before every trip.
How far offshore do you have to go for grouper in Sarasota? Shorts start 5–10 miles out. Plan on 15–30 miles (70–120 ft) for keepers, 30–40+ for big fish.
What is Swiss cheese bottom? Flat limestone full of solution holes — low-relief hard bottom that red grouper live in. It marks as a hard return with little structure showing.
Do I need a descending device for red grouper? Yes. A descending device or venting tool must be rigged and ready on any vessel fishing for reef fish in Gulf state or federal waters, and barotrauma kills released fish from 70+ ft without one.
What’s the best eating size? Fish in the 20–26” class. Bigger fish are old breeders — take a photo, descend it, and let it keep spawning.
